My Favorite & Easiest Weeknight Meals

I'm in my second trimester now (20 weeks, actually!) and the lack of appetite is a daily thing while the nausea is creeping back in. So, cooking and meal planning and eating are not my things right now. But, I do have a family to cook for. They still like eating!

Between a friend who recently started making freezer meals for us and this list of go-to easy meals, we're slowly getting through days.

Here's what we eat when I have no idea what else to do!


Greek Chicken Pasta Salad - recipe here

Chicken Taquitos - recipe here, switch out the pork for a rotisserie chicken from your local grocery store deli. You can also pre-prep the taquitos before hand and stick in the fridge until you're ready to cook them.

Pancakes - recipe here

Chicken Tostadas - recipe here

Grilled Chicken Sandwiches -marinade recipe here, just grill the chicken and top with lettuce & tomato. Serve with chips and fruit.

Stromboli - recipe here, we use a bag of pizza dough from our local grocery store bakery and add basil leaves!

The Sunday Edition, 31

Our washing machine broke this week and it just felt so crushing for a day or two. But, it led to a family day at the laudromat and a stop for donuts & ice cream, and new memories made. It reminded me to focus on the good and the bright and the joy. Between being utterly exhausted with this pregnancy and trying so hard to keep up, it's easy to feel like I'm drowning in the midst of life. In the end, we fixed the washing machine together, as a couple, tackling something we had no idea what to do - the internet is a great thing some days.

So, here's my Sunday edition. It's full of the happy and the bright and the joy I've found online this week. They are crammed into the corners of my mind and my social media presence and I save them and collect them between the other joy-filled ordinary moments of life.

A new salad recipe to try for the summer.


We recently finished watching the entire Big Bang Theory series and I stumbled across this photoshoot that Jim Parsons did and I almost can't believe that it's Sheldon Cooper!





I've been following Ashley & Dino start their inn and it's dreamy and summer magic with amazing design all wrapped together.

I'm still playing catch up with posting all of my recent reads. March had some good books in it!


Such a Quiet Place
- A good summer thriller read!

Let Me Tell You What I Mean - Another solid Joan Didion read.

The Speed of Light - A good read if going back and forth in time doesn't bother you!

A Court of Frost and Starlight - The next chapter in the ACOTAR series.

Local Woman Missing - A decent, twisted thriller read but I'm having trouble remembering the specific details, if I'm being honest.

The Light Through the Leaves - I'm a pretty recent fan of this author and this newest book didn't disappoint. 

Down Range - I picked up an ARC copy of this from a bookseller friend and I was hesitant to read it since it's a little outside by usual genre. Once I started it, I couldn't put it down! 

A Court of Wings and Ruin - Another good ACOTAR read!

A Court of Mist and Fury - More of the ACOTAR series. I found parts really cheesy but overall it was a good fantasy series to dive into and I tended to read the books back to back.

Mother's Day In Savannah

Mother's Day in Savannah is a family tradition of sorts by now. We haven't done it every Mother's Day but I do tend to gravitate there most years. Lunch at some charming city restaurant, walks down cobblestone streets and popping into little shops tucked away. 


Savannah is really one of my favorite places to visit! There's always something new to see and try. We tracked down the sweetest bookshop that was literally around the corner. E.Shaver Bookseller was the kids favorite stop of the day. They tracked down the 3 resident cats, settled in with books, and had fun navigating all the rooms in the historic house. 


Lunch was at the Little Duck Diner and we all chose breakfast foods that did not disappoint. I loved the retro diner with a modern touch vibe that the aesthetic had. 


It was a sweet day filled with good moments. Breakfast in bed, handmade cards, an evening spent snuggled on the sofa and so much love.

It's a quiet Sunday. My crew is off secretly shopping for mother's day and hanging out in the sunshine outside. I'm inside, trying to convince myself to clean something but instead I think I'll start a new book or catch up on a show.

We're six weeks out from finishing the school year and while the kids love it and masks mandates around here have been relaxing, it's still a lot and we're all dreaming of the summer that's around the corner. In the meantime, we're living for the weekends.

The best pizza in every state. We happen to live about 30 minutes away from one in Georgia and you know I added it to my must-try list!

Hilton Carter x Target. I can't wait for this new collection to drop!

That "blah" feeling you've been feeling? It has a name

But, another really good point of view on the blah and languishing.

A salsa recipe I think I'll try out this spring.

Downtown Abbey is coming out with a movie sequel and I'm already planning my solo movie date!
