This is probably the last meal plan I make before I give birth! I think we're all feeling the jitters that comes a week before labor so here's to our meal plan keeping us on track and bringing some calm to our last full week as a family of 4.

It's been awhile since I've posted a weekly menu! Rest assured, I'm still relying on them to make our evenings run smoother and avoid extra drive-thru runs. 

The kids are busy most weeknights since after-school activities have started back up and I know adding a newborn to that mix is going to throw us for a big loop so I've been trying to dedicate Friday or Saturday mornings to ordering a grocery pickup for the weekend and jotting down a list of meals to cook throughout the week. 

I'm so thankful that while my appetite hasn't exactly returned from before pregnancy, my aversion to foods has mostly gone away and cooking doesn't feel like an art of torture anymore most days. This week it's all about easy meals that I can throw together since we're still juggling the act of figuring out how to best run our weeknight evenings and still fit in everything (homework, soccer practice, family time...etc.).

I gotta say - it's nice to be able to dream up some meals to feed my family instead of feeling sick every time I think of food thats not a fruit. I can't say the appetite is really back, but the food aversions aren't so bad lately and that's a win in my book. 

We skipped the meal planning last week since it was just a crazy week. We spent a long weekend out of town and Lia got sick as soon as we got home with some weird 12-hour stomach bug and the kids missed extra days at school. It was a trudge through and fly by our pants kind of week.

I'm hoping this week is a little smoother, though showing up to my doctor appointment an hour late (unknowingly!) isn't giving me the fuzzy feelings. Here's to recovering from that with actually having a dinner plan and the motivation to make a grocery list!

This is the first meal plan I've created since early March. To say this pregnancy has not been the easiest would be a little understated. But, I took advantage of feeling like I could tackle it this week and did a grocery haul. So, here's to a week of not wondering whats for dinner every day at 4 o'clock!

My Favorite & Easiest Weeknight Meals

I'm in my second trimester now (20 weeks, actually!) and the lack of appetite is a daily thing while the nausea is creeping back in. So, cooking and meal planning and eating are not my things right now. But, I do have a family to cook for. They still like eating!

Between a friend who recently started making freezer meals for us and this list of go-to easy meals, we're slowly getting through days.

Here's what we eat when I have no idea what else to do!


Greek Chicken Pasta Salad - recipe here

Chicken Taquitos - recipe here, switch out the pork for a rotisserie chicken from your local grocery store deli. You can also pre-prep the taquitos before hand and stick in the fridge until you're ready to cook them.

Pancakes - recipe here

Chicken Tostadas - recipe here

Grilled Chicken Sandwiches -marinade recipe here, just grill the chicken and top with lettuce & tomato. Serve with chips and fruit.

Stromboli - recipe here, we use a bag of pizza dough from our local grocery store bakery and add basil leaves!

It's January and it's taken me the first 11 days to even sort of settle into the year. 

We wrapped up Christmas pretty quickly and took off for Florida. When we got back, I couldn't seem to get my head straight. There was the shit show at the capital. Nico's SIXTH birthday! And, we got word while in Disney that his Kindergarten in-person start date was being pushed up almost an entire month.

He started today! Which, besides leaving me even more emotional & foggy-brained, put us into a whirlwind of a weekend celebrating his birthday while shopping for uniforms and groceries to make lunches with. 

It's been a weird day but I'm excited for my productivity levels to rise! Starting with some home-cooked meals for my crew...

It's the last menu of 2020. That feels so crazy to write! It's a short and sweet one. Using up some basics we already have on hand and making the meals easy classics. We leave for Florida on Saturday and I need all the mental freedom to get the house back together and pack our bags!

It's time for another holiday meal plan! Food is so closely related to holidays, don't you think? We create such beloved traditions with food during the holidays we celebrate. 

For us, years ago, we started a tradition of spaghetti & meatballs on Christmas Eve. I was very pregnant with Lia and the doctors that day decided I would go in to be induced the day after Christmas and we had planned to host a Christmas Eve dinner for Manny's family. The easiest thing to make for his large family was spaghetti and from there the tradition was born. We've had it every Christmas Eve since.

And a few years ago, we went to Savannah on the eve of Christmas Eve to finish up some last minute shopping and wander the twinkly-lit city streets and share a meal at our favorite cuban restaurant. Somehow, we did the same thing the next year and then the next and I realized we had inadvertently started a tradition. Christmas Eve Eve cuban!

Now that we're settling into December and getting back to our daily school routine, it's back to simpler meals around the table.

I always throw the question "what do you want to eat this week" out to my crew as I'm making my meal plan. Nine times out to ten Lia asks for hot dogs and M asks for enchiladas and I started telling them that they are banned from those requests. Ha! This week L added in potato soup to the mix and she was so excited to see both of her picks on the menu.

Our Thanksgiving Menu

It's going to be just the four of us spending Thanksgiving together at home this year. Our little crew doing just our thing! We've actually spent the last couple of Thanksgivings at home so I'm well-adversed in the 'roasting a turkey' department and just really excited for a few cozy days off.

It's been a mess of a year. Yet, we still have so much to be grateful for!

We're going to make the most of our day together. Making one of the kid's favorite breakfast food, setting the table with our fancy glasses and decorating with the leftover pumpkins I banished to the garage last week, and snuggling up with the parade on the TV.

We'll probably talk about going out and getting a Christmas tree and play a game or two. And maybe, just maybe, our elf will make a slightly early appearance. This season is all about magic, after all.

PS. These are the only mashed potatoes we make and they are the best ever.

Frosted Halloween Cookies

Traditions are a big sentimental thing for me! The routine and comfort that comes from doing the same thing each year is well, comforting. The kids thrive on it too!

And these cookies are a big tradition in our house. We make this for all the major holidays and sometimes the smaller ones too. They can get a little messy but they are easy to make and the fun and taste completely rule out the mess factor! 


I think the best part is mixing up colors for the frosting. I usually only keep the basic red, blue, yellow, and green food coloring in the house and I play around with the color recipes from this pin


This is the recipe we use every year. I shared it last year too. It's from an old Better Homes & Garden cookbook that I have only ever used for this recipe. The page is ripping out and it's stained and crusted with flour but it's a keeper! I follow the cookie recipe as is but I definitely add in extra flour when it comes to rolling out the dough. Even after 30 minutes chilling, it's usually still sticky.

As for the frosting, I mix the recipe as it calls and then usually add around 2 extra cups of powdered sugar, give or take. You want a creamy frosting that isn't runny and doesn't feel like it's only butter. It's going to seem extra sweet but once you frost the cookies, it all balances out. Trust me!

All those good intentions of keeping up with the strong "keep our mess" together vibes I had going on that first week of virtual school are tucked away under the sofa and in the corners with all of the dust bunnies.

Shit got real, real quick. 

There was the original adjustment to full-time virtual school with zoom classes scheduled throughout the day, at different times, for both kids. Days of sitting in the car while the kids alternated testing in-person. Just finding our way together. Then, there was the district choice to open up a hybrid option this week and the chaos that goes along with it. Even though we opted to keep our crew 100% virtual for now, their teachers and schedules have changed slightly and some of the routine and comfort we built in the first couple of weeks is a little shaky now. 

Add in another miscarriage last month, busy weeknights, and a total lack of keeping a routine or schedule for myself has made the last few weeks feel like a lot.

It is what it is. My very fitting 2020 motto.

So, I made a to-do list and forced myself to find time to get things done this week. I meal planned and grocery shopped and scrubbed toilets and we're getting somewhere.

And, here's what we're eating this week!



Good, comfort eats is where it's at this week. We're bouncing from ballet to soccer almost every night this week! A good dish of fried rice is a good cure-all for a hectic night.

Meal planning is going to save our sanity!

The first week of school is never an easy feat, but make it virtual learning? And, a certain amount of extra chaos is going to be involved. I have what feels like a hundred emails from the kids' schools, testing dates on our calendar, and a jumble of new school apps to learn.

We fared relatively well, though, last week! The internet connection didn't fail us, we were only late to one zoom class, and I credit our success to the kids' amazing teachers and having a meal plan for the week! It was one less thing in my day to figure out.

It's that time of the year when the weather cools down (if you live somewhere else, anyways) and the weeknights get hectic with back to school and sports, so I filled this week's plans with lots of comfort food and slow cooker meals to balance out that madness!

So, we found out today that our guy has covid. We believe it's being traced back to his work and while the kids and I have no symptoms, we plan to self-quarantine in the house (separated from M, of course) and just assume we're positive. He's okay and we're okay and we're just hanging in there.

Up until now, we've been cautious. We wear masks and hand sanitize, we don't really socialize outside of a super tiny circle. It's a weird feeling, feeling guilty and terrible that you could have spread it to someone else, but knowing that, in this covid-era situation, you did everything you could with the knowledge you had on hand.

That being said, I'm pulling double duty and meals are about to get real easy again (and all groceries are getting delivered!).



I think I'll enlist the kids help in making the pizza dough. We're going to have to get creative again with how we spend our days at home!
