This Week's Dinners

A little meal plan to bring some calm to the week! It's been a lot, lately. Are you longing for the slow dog days of summer, too? Cooking something with intention, lazy afternoon BBQS, feeling the long day stretching out ahead of you? I've living for those days!

With the calendar looking FULL this week, my goal is to stay on track around the house and at mealtimes.  This week that means scheduling take-out in our plan because there's a few nights where it's just impossible to cook a meal and get us around the table. Eating in the car or on the soccer field is just where we're at this season.

May your week be full of good food and a few lazy moments!

It's a short meal plan this week since we're going to Disney! Food just tastes better at Disney, you guys. But until then, we're taking advantage of being on break from school and soccer and making some new recipes. I've got a dentist appointment this week that I've been dreading and we still have lots of packing/prepping to do so here's hoping we can fit in a side of family game night with dinner one night before we leave!

It's the last full week before spring break and our Disney trip and we're all feeling a little antsy to get through the next few days! There's nothing like a trip just around the corner to brighten up your week.

It's a full week for us too. Soccer, doctor appointments, ballet, booster shots scheduled, celebrating M's birthday, and lots of to-dos & piles of laundry! Here's to a good week and some meals around the table!

Calling this week's plan "whatever I can pull together on the first week of soccer practices"! Making double batches of rice and relying on the slow cooker to help combat the crazy evenings that go by in a blink. I swear, one minute it's 4:30 and the next it's 7:30 and we're late for bedtime routine again.

The dinner menu for this week is up and I'm excited. We're having a surprise (for the kid's) guest this week and I'm making her favorite dish of mine (salsa verde enchiladas!) along with my new favorite thing to make (pernil)!

We are in a season of life that is taking up a lot of our time and sitting down to dinner together every night is one time we're trying to not give up admist the chaos. Cozy food, good company, and time to chill out and breath.

the recipes
Salsa Verde Enchiladas (not my recipe but very similar!) // Air Fryer Chicken Legs // My favorite recipe for Mashed Potatoes // Beef Pot Roast // Arroz con Gandules

monday // grilled chicken & peppers w/rice (we top this with homemade cheese sauce and call it special rice named after a dish at a local Mexican restaurant!)

tuesday // chicken caesar club salad

wednesday // chicken wings

It's been awhile since I've posted a weekly menu! Rest assured, I'm still relying on them to make our evenings run smoother and avoid extra drive-thru runs.

The kids are busy most weeknights since after-school activities have started back up and I know adding a newborn to that mix is going to throw us for a big loop so I've been trying to dedicate Friday or Saturday mornings to ordering a grocery pickup for the weekend and jotting down a list of meals to cook throughout the week.

I'm so thankful that while my appetite hasn't exactly returned from before pregnancy, my aversion to foods has mostly gone away and cooking doesn't feel like an art of torture anymore most days. This week it's all about easy meals that I can throw together since we're still juggling the act of figuring out how to best run our weeknight evenings and still fit in everything (homework, soccer practice, family time...etc.).

monday // last bbq of the summer! bbq ribs & roasted corn on the cob

tuesday // pulled pork sandwiches & an easy cole slaw (toss together a bag of coleslaw mix, lime juice, chopped parsley, & salt)

thursday // lasagna

friday // stromboli

Trying to pick back up on the meal plan routine! It never fails to make our evenings run smoother and I'm still sending up little shouts of gratefulness that cooking (and eating!) is getting a lot better.

monday // take-out since we're out of town

tuesday // one-pan sausage & potatoes with corn on the cob.

wednesday // spaghetti & meatballs

thursday // pizza takeout for movie night in the park

friday // salsa verde chicken enchiladas

I gotta say - it's nice to be able to dream up some meals to feed my family instead of feeling sick every time I think of food thats not a fruit. I can't say the appetite is really back, but the food aversions aren't so bad lately and that's a win in my book.

We skipped the meal planning last week since it was just a crazy week. We spent a long weekend out of town and Lia got sick as soon as we got home with some weird 12-hour stomach bug and the kids missed extra days at school. It was a trudge through and fly by our pants kind of week.

I'm hoping this week is a little smoother, though showing up to my doctor appointment an hour late (unknowingly!) isn't giving me the fuzzy feelings. Here's to recovering from that with actually having a dinner plan and the motivation to make a grocery list!

tuesday // pulled pork with a crunchy, lime-y cole slaw (toss together cole slaw mix w/lime, parsley & salt!)

wednesday // pork taquitos

thursday // twice baked potatoes (but I start by baking them according to this recipe so they are extra crispy and salty on the outside!)

friday // homemade pizza

This is the first meal plan I've created since early March. To say this pregnancy has not been the easiest would be a little understated. But, I took advantage of feeling like I could tackle it this week and did a grocery haul. So, here's to a week of not wondering whats for dinner every day at 4 o'clock!

monday // grilled chicken with a lemon parm chopped salad (simple kit I grabbed at the store!)

tuesday // a fend for yourself night. i'm going out for book club so, Manny is tackling dinner for the kids.

wednesday // burgers on the Blackstone w/corn on the cob

thursday // chicken tostadas

friday // chicken & potato stirfry

What's on your menu this week?

It's January and it's taken me the first 11 days to even sort of settle into the year.

We wrapped up Christmas pretty quickly and took off for Florida. When we got back, I couldn't seem to get my head straight. There was the shit show at the capital. Nico's SIXTH birthday! And, we got word while in Disney that his Kindergarten in-person start date was being pushed up almost an entire month.

He started today! Which, besides leaving me even more emotional & foggy-brained, put us into a whirlwind of a weekend celebrating his birthday while shopping for uniforms and groceries to make lunches with.

It's been a weird day but I'm excited for my productivity levels to rise! Starting with some home-cooked meals for my crew...

monday // chicken & waffles

tuesday // potato soup

wednesday // grilled chicken caesar salad

thursday // burgers w/roasted fingerling potatoes

Not having to cook or do the dishes is always one of my favorite part of vacations. But, by the time we get back home, I'm usually ready to cook up a few good meals for my crew. Lots of comfort food this week to fill up our bellies and our souls!

It's the last menu of 2020. That feels so crazy to write! It's a short and sweet one. Using up some basics we already have on hand and making the meals easy classics. We leave for Florida on Saturday and I need all the mental freedom to get the house back together and pack our bags!

monday // pizza takeout

tuesday // lia's choice! it's her birthday and as of now, she's still debating! :)

thursday // carne asada tacos

friday // burgers

We don't usually eat anything special on NYE. Growing up, my mom always ate black eyed peas for good luck and wealth but I never got one board with that tradition. What are your NYE food traditions?

It's time for another holiday meal plan! Food is so closely related to holidays, don't you think? We create such beloved traditions with food during the holidays we celebrate.

For us, years ago, we started a tradition of spaghetti & meatballs on Christmas Eve. I was very pregnant with Lia and the doctors that day decided I would go in to be induced the day after Christmas and we had planned to host a Christmas Eve dinner for Manny's family. The easiest thing to make for his large family was spaghetti and from there the tradition was born. We've had it every Christmas Eve since.

And a few years ago, we went to Savannah on the eve of Christmas Eve to finish up some last minute shopping and wander the twinkly-lit city streets and share a meal at our favorite cuban restaurant. Somehow, we did the same thing the next year and then the next and I realized we had inadvertently started a tradition. Christmas Eve Eve cuban!

monday // enchiladas

tuesday // grilled chicken cobb salad

wednesday // cuban at our favorite restaurant

thursday // spaghetti & garlic bread

friday // hibachi

saturday // chili

I typically only plan from the weekdays and we eat out or plan our weekend meals as they come up but this week I planned for the weekend after Christmas so we aren't scrambling with the last of the holiday crowds!

Do you have special holiday meal traditions? I'd love to hear them!

It's the last full week of school before holiday break and the excitement is getting real around here! And since we have a week full of fun christmas advent calendar activities filling up our evenings, dinner is all about comfort and easiness this week. Though, that's not far off from most of our weeks, if I'm being honest!

tuesday // homemade pizza

wednesday // lasagna

thursday // twice baked potatoes & salad

friday // chicken wings & carrot chips

Tell me, what's your favorite comfort food? Hands down, it's pizza for me!

We have a full week coming up and I didn't prep our meal plan until today! Which means, I feel a little scatterbrained and behind. It's not my favorite way to start a new week, but it happens.

So, I'm falling back on easy and delicious recipes that I can get on the table between L's multiple ballet rehearsals this week, holiday to-do's, and school testing!

Monday // pizza takeout

Tuesday // garlic ranch chicken & mashed potatoes

Wednesday // hibachi

Thursday // pepper steak & rice

Friday // tbd!

Here's to getting the fridge filled!

Now that we're settling into December and getting back to our daily school routine, it's back to simpler meals around the table.

I always throw the question "what do you want to eat this week" out to my crew as I'm making my meal plan. Nine times out to ten Lia asks for hot dogs and M asks for enchiladas and I started telling them that they are banned from those requests. Ha! This week L added in potato soup to the mix and she was so excited to see both of her picks on the menu.

Monday // cheesy bacon chicken & salad

Tuesday // potato soup & sourdough bread

Wednesday // chinese takeout

Thursday // burgers & hot dogs

Friday // homemade pizza

Here's to a cozy week and good food!

This week's eats are coming to you straight from my crew. They all (well, all except for Nico!) pitched in their favorite meals while I wrote down a quick shopping list over the weekend.

Our weeks are finally starting to slow down as the holidays get closer and soccer takes a break after today. Lots of cozy meals and cozy nights ahead.

monday // pulled pork sliders

tuesday // pork tacos

wednesday // enchiladas & rice

thursday // potato soup

friday // lasagna & salad

Happy week before Halloween, boos!

Another week of back-to-back soccer games and ballet classes so I'm leaning heavy, again, into some cozy recipes that are pretty easy to pull together. Also, I've been thinking about writing down all of my favorites instead of digging through Pinterest and making some sort of a family recipe book/box!

And here's what we're eating this week...

monday // arroz con pollo

friday // teriyaki chicken & fried rice

Breathe. Eat. Hydrate. Read a book. We've got this!

All those good intentions of keeping up with the strong "keep our mess" together vibes I had going on that first week of virtual school are tucked away under the sofa and in the corners with all of the dust bunnies.

Shit got real, real quick.

There was the original adjustment to full-time virtual school with zoom classes scheduled throughout the day, at different times, for both kids. Days of sitting in the car while the kids alternated testing in-person. Just finding our way together. Then, there was the district choice to open up a hybrid option this week and the chaos that goes along with it. Even though we opted to keep our crew 100% virtual for now, their teachers and schedules have changed slightly and some of the routine and comfort we built in the first couple of weeks is a little shaky now.

Add in another miscarriage last month, busy weeknights, and a total lack of keeping a routine or schedule for myself has made the last few weeks feel like a lot.

It is what it is. My very fitting 2020 motto.

So, I made a to-do list and forced myself to find time to get things done this week. I meal planned and grocery shopped and scrubbed toilets and we're getting somewhere.

And, here's what we're eating this week!

Good, comfort eats is where it's at this week. We're bouncing from ballet to soccer almost every night this week! A good dish of fried rice is a good cure-all for a hectic night.

Let's jump into the flow of the season, friends. Eat some good food and enjoy those hectic nights!
