I think we stuck to our meal plan last week every night except for one! It was pretty great. Also, going out for mexican food instead of cooking was pretty great too!

I threw in a couple of new recipes that I am excited to try this week. Also, I'm already drooling over the idea of chicken & waffles. It's one of our favorite "easy" meals to make that pleases everyone. Our shortcut is to always grab fried chicken from Publix or Parkers! Our local gas station chain, Parker's, has a hot food bar and their fried chicken tenders are seriously good. 

But, here's a recipe for chicken and waffles that looks amazing, if you're looking to make everything from scratch. If I am ever feeling adventurous one day, maybe I'll try it! Ha!

And, of course, we've got a couple of quick go-to's like burgers and crockpot pork to help balance out busy-ish days. Between soccer and decluttering ALL the stuff, our days have been full the last week.

SUMMER FAVORITES

The official start to summer is so close but here in South Carolina, the heat + humidity have already arrived. It's a really good thing we replaced our AC and installed a fan on the back patio!

If you guys are anything like us, summer break feels like heaven. Especially this year. At-home schooling was not fun around here, for any of us. And with social distancing still happening, we're soaking up our lack of plans and spending most of our days at home.

Here are some of our summer favorites to get us through the days!

Old Navy + Gap are my go-to's for stocking up on swimsuits but Walmart actually surprised me this year! I grabbed L several cute ones on clearance this week along with that teal coverup. Our neighborhood pool opened up recently so I foresee a good amount of time being spent there. We also have a small inflatable pool for our backyard so the kids will probably live in swimsuits this summer.

With our new patio makeover making major progress, the kids are spending more time outdoors. Jump ropes, bubbles, and the soccer ball are regularly pulled out of the toy bin and that green toys one has held up so well for YEARS.

And, for the super hot days - homemade popsicles! I'm on the hunt for some good flavors to try. These lemonade stand popsicles looks so yummy.

What I read in May

May was a good mix of heavy reads balance out with lighter ones. The books spanned through so many subjects and categories.

 I found myself diving into heavy issues with American Dirt - both in the book AND the real life controversy to the book. I found myself sad and in awe while reading Educated. I laughed at Parental Guidance and Red, White & Royal Blue. 

American Dirt, When We Believed in Mermaids, and Red, White, & Royal Blue were my favorites. Though they were all good and worth reading!

I also re-read the Hunger Games series to refresh my mind before I read this one.

I'm at the point where I now need to decide if I should extend my goal (currently I'm set to read 52 books this year) or finish strong and then just keep reading until I make a new goal next year. What would you do?

let's do better

Politics aside, I think this is a statement we can all agree on. Let's do better! For today, for tomorrow, for our children, for THEIR children. We can do better, so let's start.

I have spent most of 2020 with an anxiety-filled heart and mind. Covid-19 concerns, quarantines, chaos around the world, and now this. It's tiresome and heartbreaking. It makes me angry and upset and confused. And, I know that I am blessed and privileged. I am thankful for that and hyper aware that it is something that I cannot deny or overlook.

I have spent most of the last week reading articles, watching shows and movies based on racism, and researching books to add to my reading list. I have sat back and listened. I have sat with my thoughts, trying to un-jumble them. I have been actively trying to diversify my social media feeds. Not because I believe that following people of color will somehow be a quick fix. But, because I want to see a change in the world and we can all change the world with the steps we take in our personal lives.

I want to broaden the type of content that I see on my social media feeds. I want to open my eyes to more than just what's happening inside my privileged bubble. I want my kids to grow up being anti-racist. I want them to see color and to appreciate color - especially their own.

I am raising two beautiful, biracial children with an amazing brown husband. We have had to find the balance between his background and mine and find a cohesive way to raise our babes. And, we have! But that doesn't mean the work is done. That doesn't mean our kids won't face racism in their lives. That doesn't mean they won't one day question why they don't quite look like mommy or daddy.

So, really, I just wanted to acknowledge it here. Inspiring quotes, sharing tweets, and posting a black box of silence is all well and good as long as it doesn't stop there.

I've gathered a list of resources, articles, books I'm adding to my shopping cart and library holds, and parenting tips and I am sharing it here. It's a small step, but it's a step.

I may share or say something wrong. Odds are that I already have. I might really mess it up sometimes. But, I can't learn unless I keep pushing forward and doing the work in my heart, in my life, and even in my social media feeds.

THIS WEEK'S DINNERS

Don't those fries look SO GOOD? It's a recipe my husband discovered online a while ago and we love to recreate it every now and then. You can the recipe here - and the marinade works just as well with chicken!

We have been eating a lot more meals at home the past few months! Or, trying to. I can't turn down a good food truck event in the neighborhood or pizza takeout. But, with covid-19 still floating around and restaurant limitations, we really aren't going out quite as much.

Thankfully, our area hasn't had too many issues with food suppliers and we can usually find what we need at the grocery store any given day! Except the holy trifecta of toilet paper, lysol, and hand soap. It's like winning the lottery when you find the a store stocked them.

Anyways, here's whats on the menu for this week! I dropped the ball with meals the last two weeks and it was um, noticeable. So, I planned an entire week and shopped for everything tonight.



Here's hoping the next week is a little smoother!
