Meal planning after a trip or vacation is one of the few times I actually enjoy meal planning! I love eating out on vacations - trying new places and having someone else to clean up after us (isn't it the best?) - but after a few days I really miss having a good home-cooked meal.
With just a few weeks of summer left, I'm filling the next few plans up with our favorite + easy summer meals too!
I'm not the greatest cook. I love looking at pretty photos of delicious food and I love reading cooking blogs, but those habits don't lead to any better cooking on my part! I'm not bad at it, really - it's just not a passion. I'd rather be taking the pretty photos or catching up on a lesson of Spanish or helping the kids put together a puzzle.
Cooking just isn't my jam. I'm the main cook around here though so it's simple + easy recipes 99.9% of the time. And this pepper steak one is a classic favorite.
I learned the recipe from my in-laws years ago and just like the original recipe came to me, I have no measurements to give! I promise it's easy though.
You'll need:
some top round steak. I like to buy the kind already cut into strips.
a few bell peppers in a mix of colors.
one yellow onion.
your favorite season - we use Goya Adobo.
and, some oil.
Heat up your oil in a large stock pot, then toss in your steak and season it well. It's important not to under-season it or you'll end up with very bland steak. Put a lid on it and let the stove do it's thing, stirring it occasionally.
Once the meat is cooked through and softening up (30 minutes or so), add your peppers and onions, taste to see if it needs more seasoning, and let cook another 10-15 minutes - or until the vegetables are cooked to your preference.
Serve over rice and enjoy!

We had so much fun exploring some local beaches, soaking up the salty, sea air on a quiet Monday evening last week. And of course, no trip to the island is complete without a stop at the Rita's stand. Cherry gelati with twist, please!
It's really fun to play tourist in your own town and find the hidden gems you've somehow overlooked. Bonus - no travel time! Our kids really don't like long car rides. They have the "are we there yet" questions nailed down. So, when I was talking with a friend recently and she mentioned a local beach that isn't usually crowded (beaches here in the summer time here are usually packed!) and totally worth a visit we put that one at the top of our list for our next beach evening.
It did not disappoint! We squelched through the mud left behind from the low tide, dodging the crabs scurrying around. The kids watched airplanes as they flew in low ready to land at the nearby airport. We even peeked around at a couple of turtle nesting spots, careful not to disturb anything. And, we quickly realized that this was a great spot for beach combing and hanging out!

The kids had their heart set on building a sandcastle and jumping in the waves, though, so we packed up and drove down to our favorite local spot.
It's usually quiet(er) in the evenings when the sun is low and the tide was perfect for the kids. They are never happier than when they are playing in the ocean. It's one place I have no problem capturing some real smiles!
Meal plans! Grocery shopping! Laundry! All things I am terrible at! I mean, there's just so many other things I'd rather be doing, am I right?! But, they all kind of keep my world right too, so, here we go.
I kept this week's plan basic - it's full of our favorite + easy go-to's! We leave for vacation on Friday and I'll be spending the week cleaning the house & packing and all that jazz.
